Devo dire che non ho mai ricevuto cosi tante richieste per una ricetta…quindi eccovi accontentati!
I brownies sono un dolce tipico americano, riprodotto e copiato nelle più svariate ricette. Nei supermercati americani si trovano polveri “magiche” pronte per farli (e ve le sconsiglio) e su internet nascono ogni giorno ricette nuove. Sempre diverse. E sempre sbagliate, ahimè.
Ma ho qui la soluzione.
Questa ricetta è la vera, originale americana e se la seguirete nei minimi dettagli, proverete il gusto di un vero brownie senza dover aspettare un viaggio negli States.
La particolarità delle mattonelle sta nella croccantezza dell’esterno ( decisamente più chiara e dura) e nella morbidezza un pò “collosa” dell’interno (più scuro e morbido).
E il gusto non è quello della tenerina, per intenderci. Nè quello dei dolci al cioccolato o delle mattonelle fondenti. Il gusto del brownies è unico, molto zuccheroso ma mai troppo dolce, con un retrogusto amarognolo delle noci pecan e una consistenza unica.
Io li ho appena sfornati (da regalare domani ad un amico che ne va matto), ma se riuscite a resistere, aspettate qualche ora prima di tagliarli a rettangoli. (il giorno dopo sono ancora migliori)
Ed ecco la segretissima ricetta:
120 gr cioccolato fondente
225 gr zucchero semolato
2 uova
90 gr burro
90 gr farina
60 gr noci pecan
Sciogliete a bagnomaria il cioccolato fondente con il burro.
Lasciate raffreddare e unite le uova sbattute.
– Qui vorrei precisare, a tutte le persone che hanno provato a farli e mi hanno chiamato disperate perchè il composto diventava durissimo, che le uova vanno SBATTUTE non montate, nè tantomeno inserite intere. Vanno sbattute con una forchetta in una tazza e versate dentro quando il composto è freddo, altrimenti si cuocerebbero e si avrebbe il risultato disastroso…-
Aggiungere poi zucchero e farina e mescolare rapidamente e delicatamente.
Aggiungere poi le noci.
Versare il composto (che sarà molto denso) in una pirofila di ceramica rettangolare (tipo gratin) e infornare per 30 minuti a 180°.
Il risultato, e chi li ha provati lo sa, è unico. Senza esagerare.

una domanda!!!! io ho cercato più siti con questa ricetta e alcuni dicono che ci serve il lievito e non capisco perchè alcuni dicono che ci serve e altri no…in questa ricetta serve o no il lievito???? lo chiedo perchè ho fatto tanti altri dolci e a volte anche con il lievito il dolce non cresceva e nn vorrei succedesse di nuovo!!!! grazie

Ho solo una domanda perché se ho capito bene devo mettere le noci pecan intere dato che non è specificato che si devono sbriciolare.. Lì ho fatti oggi, ma ho un paio di dubbi. I tempi di cottura: 30 minuti a 180° a forno statico sopra-sotto o ventilato? I miei (dosi raddoppiate causa festa con molte persone) li ho lasciati 50 minuti e sono al limite… Moooolto appiccicosi, dico.
E un’altra cosa: si sono rotti tutti. La crosticina forse era troppo spessa… Insomma, sono una frana.
Il sapore è buono, ma secondo me i tuoi erano tutt’altra cosa!!! Grazie comunque, perché erano giorni che cercavo la vera ricetta!!!
